I'm looking to compress a bunch of large files/folders (in the 30-40 Gb range). Anyone have any experience with this?

I've routinely used this for 15-20 Gb files and have even compressed a 100 Gb windows backup file to 10 Gb in under 2 hours!
Works like a charm but its always better if you can break down the file/folder into smaller chunks - it is much faster in smaller chunks.
Here's an interesting video http://www.wonderhowto.com/software/other-apps-video/how-to-break-up-lar... walks you through breaking large files into smaller chunks using 7-zip
