Vitamins A, D, E, and K are only soluble in fat. Vitamins C and B are soluble in water. Water-soluble vitamins are excreted in the urine and are more easily absorbed in our bodies. Fat-soluble vitamins need to be absorbed through the skin or intestinal tract.
