You want to capture the text within the video? Like, the closed-caption text? Or, do you want something like a stream-ripper? Please clarify.

You can try streamripper, which lets you capture a stream and save it as a file.

If not, I don't think you can pull out a 'layer' from within a video file unless you have access to the raw components.

Take a look at Jing (www.jingproject.com). This will capture whatever is on your screen. You can then edit the saved file too, since it is saved as a swf.
