You can, but why would you want to maintain 2 Apaches, MySQLs and PHPs? And if you have only 1, and you are on a windoze box, then the X = W.
If you need 2 instances running, you can always open 2 apache ports and be done with it.

If you are doing this on a Mac, the process is a bit more involved, since OS X comes with Apache and PHP, but MySQL is not fully set up. Leopard has a few issues in being able to auto-start and the neat GUI that used to ship to start and stop MySQL doesn't work any more with Leopard...
I would recommend going with XXamp, from Apachefriends - they have a nice all-in-one installer and a management web page from where you can start and stop your services.
