Check out Syncplicity.com. It is a new service and they will sync your 'My Documents' folder (or another one) with a hosted offering. The basic service is free and you can then purchase more space. You can also use it to keep 2 machines in sync.

I am interested in the same service. However how you do any of you feel about backing up to an Internet service, is it secure and how do you ensure that the hosting solution doesn't 'accidentally' leak any data you backup?
